I have been picking up strawberries at the farmers market every Saturday. Here is what I have been making with some of them. It goes pretty quickly, is light and fluffy and very low in calories if you use the right stuff. The addition of the egg whites give it some protein so you are not hungry, isn't that nice?
About 3 cups strawberries
3 egg whites lightly whipped
container of whipped topping
Package of clear gelatin (however it just occurred to me to try a flavoured gelatin)
1/4 c sugar or sugar substitute
Frozen limeade (I accidentally bought margarita mix and it works just fine!)
2 pkgs of the soft ladyfingers
Put strawberries into blender and zunnnnn! You should have about 1 3/4 cups. Mix gelatin into strawberries.
Put strawberries into saucepan and heat. Add sugar.
Take half of mixture and add to egg whites, then add back to the saucepan. Cook for about 2 minutes but do not let it boil. Add about 2 tablespoons of the limeade to the mix. Place into fridge to cool.
Take ladyfingers and split the apart. Line the bottom and sides of a springform pan. Take the cooled strawberries and fold in whipped topping. Spoon over ladyfingers pan.
Return to fridge to chill and set.
Top with berries, chocolate drizzles, whipped topping, creme fraiche or whatever turns you on! Or eat it naked!!!
I saw one made by cutting the ladyfingers in half around their "waist" and they didn't stand up so high. I might try that next time although I kinda like the ladyfingers. Makes me think of my Italian grandmother and the corner grocery store and meat market on Frenchman Street in New Orleans!
If you make it for company, tie a fancy ribbon around the ladyfingers. They will think you went all out for them!
Strawberries! Heck, it is still so cold here we will be lucky to had local strawberries by the end of June!
