Ree Drummond of Pioneer Woman
has a great tutorial about how to handle those bad boy pumpkins the day after.Following her directions, I cut up and scooped the insides out. Cut it into quarters and baked it for an hour and a quarter. It peeled quite easily. I have always peeled it before hand but this was way easier.
Then out came the food processor and a bit of water and a few pulses later:

This will become some pumpkin deliciousness.......I just LOVE pumpkin stuff.......yes........pumpkin.For right now, it will reside in the freezer.
OMG! I need to find a recipe for pumpkin cinnamon rolls dripping with thick sweet icing for breakfast. Heck....for right now!
