Have you ever wondered what whey was and how they make it? Well, I just made some.
Whey or milk serum is the liquid remaining after milk has been curdled and strained. It is a by-product of the manufacture of cheese. Sweet whey is manufactured during the making of rennet types of hard cheese like cheddar or Swiss. Acid whey is a by-product produced during the making of acid types of dairy products such as cottage cheese or strained yogurt.

So when I took the yogurt out of the oven, once again I wanted to strain the whey from the yogurt and make Greek yogurt. And I thought, if I am doing this twice a week or so, I will have a lot of whey. I wonder what I can use it for.

Yes, I always toss out the whey. To me it is kind of gross, so I have a hard time wrapping my head around using it. I know - I'm weird! I did make ricotta once and it didn't seem to hard to make. I used lemon juice, but I think I should have used whole milk to get more curd. You don't get much when you use skim milk! Check out Mario Batalli's (sp.?) recipe.
