Little Miss Muffet

Have you ever wondered what whey was and how they make it?  Well, I just made some.


Whey or milk serum is the liquid remaining after milk has been curdled and strained. It is a by-product of the manufacture of cheese. Sweet whey is manufactured during the making of rennet types of hard cheese like cheddar or Swiss. Acid whey is a by-product produced during the making of acid types of dairy products such as cottage cheese or strained yogurt.

So when I took the yogurt out of the oven, once again I wanted to strain the whey from the yogurt and make Greek yogurt.  And I thought, if I am doing this twice a week or so, I will have a lot of whey.  I wonder what  I can use it for.

Whey is packed with some nice protein.  It is extremely healthy, but does contain lactose so if you are lactose intolerant don't use  it.  It is known to stimulate insulin production in type 2 diabetes.  Bodybuilders use it to build lean healthy muscle.  you can use it like water in recpies, smoothies, bread dough, and ricotta  cheese.

They said ricotta was easy o make.  Let's look it up then!

Nope, too much trouble.  I can just buy it!

  1. Yes, I always toss out the whey. To me it is kind of gross, so I have a hard time wrapping my head around using it. I know - I'm weird! I did make ricotta once and it didn't seem to hard to make. I used lemon juice, but I think I should have used whole milk to get more curd. You don't get much when you use skim milk! Check out Mario Batalli's (sp.?) recipe.
