Air Bags and Amaranth

Sounds like a mystery novel, doesn't it?  Lonely sister-in-law rigs car to crash into a gravel pit among the amaranth fields, killing her brother's wife.  He really isn't her brother though, but the son of her father's filthy rich friend, given to her family to raise when the friend disappeared to a secluded island off Greece.  They find her out because of the grains of amaranth stuck to the shoes she wore that night.

Not bad, hey?

Unfortunately I am sitting in the dealership waiting for them to change out the defective air bag fitting.

And I had amaranth porridge for breakfast this morning.

What is that, you ask.

For you gluten free people out there, take 2 cups of (almond,coconut, cow) milk and 2 cups of water, bring to a boil.  Whisk in 1 cup of amaranth flour.

Turn heat down and simmer for 30 minutes, stirring occasionally

Take off heat, add 1/2 cup brown sugar, 1 tablespoon cinnamon and 4 tablespoons butter.

Makes 6 servings of breakfast or snack porridge.  Not bad, and different from the Belvita I eat every morning.

And good for some nice conversation!

Actually I bought the amaranth flour for something specific, then have no idea what I wanted it for.
